"It all started the day I graduated college and had the dreadful "Oh no, now what am I going to do with my life?" feeling, but this quickly translated into a "Finally, I'm a free man!" realization. I packed my things and moved to South Korea where I found a job teaching English. Here I discovered their national dish, kimchi. It was spicy, flavorful and could be eaten with anything and everything; meat, eggs, sandwiches, rice, veggies. When I found out it's health benefits, I was hooked!

After coming back to the US, I couldn't find the right type of kimchi. I went to stores and I tried everything but I couldn't find a comparable kimchi to those I ate in Korea. So I decided to make it myself. I intently studied the process of making kimchi and learned how to properly ferment it. Not only did I make a kimchi that was equally (or better than!) the kimchi I had in Korea, I was also putting my own creative spin on it. I began giving it to my friends, family, and coworkers and they loved it! They kept asking me if they could buy some from me, and thus, Matt's Kimchi was born."
