Preheat oven to 400 degrees.
Remove leaves from head of cauliflower.
In a small bowl, whisk together butter, oil, sea salt, pepper, thyme and crushed garlic.
Place cauliflower head in a dutch oven or baking dish and completely coat with most of the thyme mixture.
Cover pan with a lid or foil and cook in preheated oven for 30 minutes. Remove lid, brush with remaining thyme mixture and cook for an additional 10-20 minutes.
Sprinkle Parmesan, if using over cauliflower and turn oven to a high broil. Broil for 3-5 minutes or until cauliflower begins to turn golden brown.
