Turkey Sausage with Roasted Apples and Fingerling Potatoes

Ingredients:
4 Turkey Sausages
1 Kohlrabi
2 Apples
½ lb. Fingerling or Small Potatoes
1 Yellow Onion
¼ cup Scallions, sliced on a bias (for garnish)
¼ cup Pumpkin Seeds (for garnish)
1 Tbsp. Olive Oil
2 Tbsp. Rosemary
Salt and Pepper to taste
Mustard (Optional)
Preheat your oven to 375 degrees Fahrenheit. Cut apples, kohlrabi, onions, and fingerling potatoes into 1-2 inch pieces. Combine apples, potatoes, and onion in large mixing bowl and toss with olive oil, salt, pepper, and chopped rosemary. Pour mixture into a roasting pan, and roast in oven for 35 minutes, using a spatula to turn after 15 minutes. Place sausages in the roasting pan on top of the potatoes and apples, and roast for another 5 minutes, until slightly browned. Serve with a side of mustard.
