Heat 1 tablespoon sesame oil in large, nonstick skillet over medium heat. Add shrimp and season with ¼ teaspoon sea salt.
Fry shrimp 1 minute on each side, then remove from pan and pour in remaining tablespoon oil.
Toss carrots with remaining ¼ teaspoon sea salt and sauté a few minutes until they soften. Add garlic and soy sauce and sauté 30 seconds until garlic becomes fragrant. Return shrimp to pan, sprinkle with sesame seeds, and cook another minute until shrimp is fully cooked and everything is well incorporated. Sprinkle with a few more sesame seeds, if desired.
