Season steak generously with sea salt on both sides.
Remove kale stems and tear leaves into bite size pieces.
Coat skillet with a bit of cooking oil and place over high heat. Add steak and cook 3-5 minutes per side until cooked to your desired level of doneness. Set steak on cutting board to rest.
Add kale and onion to skillet and cook 5 minutes, stirring constantly until kale wilts. Stir in vinegar and honey; season with sea salt and pepper.
Slice steak against grain into ¼-inch slices. Serve sliced steak over wilted kale.
