Sautéed Green Beans with Crispy Oyster Mushrooms

30 Mins

  • 12 oz Green Beans, trimmed
  • 6 oz Oyster Mushrooms, torn into bite-size pieces
  • 2 cloves Garlic, sliced thinly
  • 2 Tbsp Sesame Oil
  • 1 Tbsp Soy Sauce


    Bring a medium pot of water to a boil. Place green beans in boiling water and cook for 3 minutes. Drain and run under cold water for 1 minute. 


    Heat 1 tablespoon oil in a large skillet, add garlic slices and cook until golden brown and crispy. Remove garlic from hot pan and add sliced mushrooms. Sauté mushrooms over medium-high heat for 7 minutes, until they begin to brown and turn crispy. Add more oil, if needed. Season with a sprinkle of sea salt. Remove mushrooms from pan and set aside. Add another tablespoon of oil to pan along with blanched string beans and soy sauce. Sauté for 5 minutes. Plate green beans and top with crispy mushrooms and garlic.
