Ingredients:
In a small mixing bowl, toss together the tomatoes, basil and 1 Tbsp. olive oil. Season with a pinch of salt and set aside.
In a large sauté pan over medium flame, heat the remaining olive oil until hot. Add the sausages and brown on all sides, about 10 minutes. Add the peppers and onions and season with salt and pepper. Stir occasionally. Cook until the onions and peppers have softened and start to brown and the sausage is no longer pink inside when sliced, about 12 minutes.
When the onions and peppers are about 5 minutes from being done, preheat the broiler. Cut open the pieces of ciabatta and layer evenly with the cheese. Place into the broiler until cheese has melted, about 2 minutes.
When done, slice the sausage on the bias into one inch pieces. On each ciabatta bottom, layer half the sausage, peppers, onions and tomato salad. Close the sandwich and serve immediately.
