Heat oil in large skillet over high heat until shimmering hot. Add asparagus, mushrooms, and scallions, and cook, stirring occasionally, until asparagus is just shy of crisp-tender, about 3 minutes. Add garlic, ginger, and sesame seeds and stir-fry until garlic and ginger are golden and asparagus is crisp-tender, about 1 minute more. Add 2 tablespoons water and scrape bottom of pan. Stir in soy sauce and sesame oil, then add sandwich steak and cook 1 minute until steak is just cooked through. Season with more soy sauce, to taste.
