Roasted Radishes with Miso Butter

  • 1 bunch Easter Egg Radishes
  • 2 tsp Olive Oil, divided
  • 1/2 teaspoon Pepper
  • 1 Tbsp Butter, softened
  • 1 Tbsp Miso


Preheat oven to 450 degrees. Twist greens off radishes, put them in a bowl and toss with 1/2 teaspoon olive oil.

Cut radishes in half, place on a baking sheet and toss with remaining 1 1/2 teaspoons oil and pepper; arrange cut-side down. Place in oven and roast 12 minutes.

While radishes roast, mix butter with miso.

Add greens to baking sheet and dot with miso butter. Roast 3 more minutes.

Remove radishes from oven and toss to mix in melted miso butter. Serve right away.
