Roasted Portobellos with Spring Garlic
10 oz Portobello Mushrooms
1 Tbsp Minced Green Garlic
1.5 Tbsp Olive Oil
1 tsp Balsamic Vinegar
1 Tbsp Butter,
unsalted and melted
1 Tbsp Chopped Fresh Herbs
Heat oven to 450 degrees with rack in the middle.
Slice mushrooms into 1/2 inch strips.
In large bowl, whisk together olive oil, melted butter, spring garlic, and balsamic. Add mushrooms and toss to coat evenly.
Spread on a roasting sheet, season generously with sea salt and pepper and roast 15-20 minutes or until mushrooms are fork tender and deep brown.
Remove from oven, and sprinkle with fresh herbs, if desired.
