Preheat oven to 400 degrees. Slice carrots into one-inch pieces.
Place carrots on baking sheet and drizzle with olive oil. Add pinch of sea salt and pepper, and then toss to coat. Place baking sheet in preheated oven and roast 40 minutes, stirring once half-way through.
After 40 minutes, carrots should be tender, their surface slightly blistered, and the bottoms browned. Let them cool slightly, so no longer steaming. While carrots are cooling, roughly chop parsley and crumble feta.
Add carrots, celery, parsley, and crumbled feta to a bowl. Add another pinch sea salt and pepper, then toss to combine. Serve warm.
