1 lb Beets
1 Asian Pear
1 head Little Gem Lettuce
½ Lemon
6 Tbsp Olive Oil
Sea Salt and Pepper
Preheat oven to 400 degrees. Peel and cut the beets into ½” slices. Toss with two tablespoons of olive oil, sea salt, pepper and a dash of vinegar or lemon juice. Roast in a covered baking dish for twenty minutes, or until tender. Core and thinly slice the Asian pear. Tear Little Gem into bite-size pieces. Make a dressing with the juice from half a lemon, four tablespoons of olive oil, sea salt and pepper. Toss beets, pear and lettuce with the dressing. Adjust seasoning and serve.
