Pasta with Sausage, Broccoli, and Blue Cheese

Cooking Time: 20 Minutes

Serves 2

Ingredients:

  • 2 cups Whole Wheat Pasta (we used Radiators)
  • 2 Italian Sausages, sliced
  • ½ head Broccoli, roughly chopped
  • 2 oz. Blue Cheese
  • 2 Tbsp. Olive Oil
  • Splash of Broth or Dry White Wine
  • Salt and Pepper to taste

Bring a pot of salted water to a boil, then add the pasta. Allow to cook until al dente, about 5 minutes.

As you begin to boil the water, heat 1 tablespoon of olive oil in a large sauce pan. Add sliced sausage to the oil. Allow to cook, turning periodically, until the sausage is browned on all sides. Add chopped broccoli to the pan and sauté for a few minutes. Add a splash of white wine or broth and allow to simmer until the pasta is cooked. Add a splash of pasta cooking water to the sausage and broccoli, then drain the pasta. Remove the sausage and broccoli from heat. Toss pasta in pan with sausage, then crumble blue cheese over pasta. Toss again and let the heat start to melt the cheese. Allow to cool for a minute or two before serving, to allow the sauce to cling to the pasta. Serve with warm, crusty bread.
