Preheat oven to 400 degrees. Place wire baking rack over a sheet pan.
In shallow dish or bowl, combine parmesan cheese, herbs, sea salt, and pepper.
Brush zucchini with olive oil until evenly coated.
Roll each zucchini wedge in parmesan herb mixture to coat all sides. Place coated zucchini on baking rack and sprinkle with any leftover parmesan herb mixture. Sheet pan should just be used to catch any drippings.
Bake 15 minutes, then flip zucchini fries and broil for 3-4 minutes until golden brown and crispy. Garnish with fresh parsley and serve immediately. Serve with an aioli dipping sauce or ketchup.
