Pan Fried Gnocchi with Apple and Sage

Prep Time: 25 minutes

Serves 2

Ingredients:

  • 1 pack Gnocchi
  • 2 ounces Tubby, Goblin, or any Alpine style cheese, shaved
  • 3 Tbsp. Sage, chopped finely
  • 1 Apple, peeled and sliced very thin
  • 1 Tbsp. Olive Oil
  • 1 Tbsp. Butter
  • Salt and Pepper, to taste

Bring a large pot of water with a pinch of salt to a boil over a high flame. Boil the gnocchi for 4 minutes, stirring occasionally. Strain and place on a plate lined with paper towels. Pat dry.

In a large sauté pan over medium heat, melt the butter. Add the sage and stir until fragrant, about 30 seconds. Add the apples and cook for 5 minutes, stirring often, until slightly cooked through. Remove to a bowl. In the same pan over medium flame, heat the oil until hot. Add the gnocchi and cook without moving for 3 minutes, until browned on one side. Carefully flip the gnocchi with a spatula and season with a pinch of salt and pepper. Continue to cook until browned on both sides, about 3 more minutes. Add the apples and stir to combine. Divide between 2 plates and top with shaved tubby.
