Hot Italian Sausage Kebabs
If using wooden skewers, soak in water for 15-30 minutes before cooking. Preheat your broiler, or a grill, on high heat. Place the oven rack about 8" from the broiler element. Cut the sausages, peppers and red onion into 1" pieces. Assemble on the skewers, alternating the ingredients and dividing equally between the four. Place the assembled skewers on a sheet tray and drizzle with olive oil. Season lightly with salt and pepper. Place underneath the broiler. Cook for 3-4 minutes, then flip and cook for another 3-4 minutes or until the juices from the sausage run clear. Great served alongside a simple cucumber farro salad.
