Preheat oven to 450 degrees.
Slice carrots into 1-inch pieces, trim greens off radishes, then cut them in half. Put all vegetables on lightly oiled baking sheet.
In small saucepan, melt butter over medium-low heat; once melted, stir in honey, pepper flakes, sea salt, and pepper until combined.
Pour honey-butter mixture over vegetables on baking sheet and stir until well-coated.
Roast in oven 15 minutes, remove, and toss, then cook 15 more minutes.
Remove from oven and toss vegetables again. Then, transfer to a serving dish. Top with cheese and chopped mint.
