Preheat grill or grill pan over high heat.
Place sliced summer squash in medium bowl. Drizzle with olive oil and sprinkle generously with sea salt and ground black pepper. Toss with your hands until all pieces are evenly coated with oil, salt, and pepper.
Add half of squash to grill. Grill a few minutes on each side, until nicely charred but just tender. Remove to large bowl; allow to cool.
As zucchini cools, whisk together lemon zest and juice, 2 tablespoon olive oil, and fresh mint. Pour over warm summer squash. Sprinkle crumbled feta cheese; toss to combine.
