Preheat oven to 400º. Place baking sheet in oven while it is preheating.
Remove all oyster mushroom “fans” from main stem so you have individual pieces.
Toss mushrooms with olive oil and garlic and season with sea salt and pepper. Make sure all are nicely coated. (Add additional, if needed). Remove hot baking sheet from oven and spread mushrooms out evenly.
Roast 30 to 40 minutes, or until mushrooms are brown and crispy. Sprinkle with cilantro, flaky sea salt and a squeeze of lemon.
