Place rack in upper third of oven and preheat to 400 degrees. Place Brussels in center of large rimmed baking sheet. Drizzle with olive oil and sprinkle with sea salt, pepper, and any other desired spices. Gently mix until sprouts are evenly coated, then spread in single layer on baking sheet. For even better crisping, flip sprouts so all are cut side down.
Bake 20 to 30 minutes, until Brussels are lightly charred and crisp on outside and tender in center. Outer leaves will be dark, too. Watch carefully towards end of baking time, as cooking time will vary based on size of sprouts. Season with additional sea salt and/or pepper, to taste. Enjoy immediately.
