Preheat oven to 425 degrees.
Place cabbage wedges on prepared baking sheet. Drizzle with olive oil and sprinkle with cumin, sea salt and pepper. Use a brush to spread olive oil and seasoning evenly.
Roast 30-35 minutes in preheated oven, flipping halfway through, until cabbage is tender and edges are golden brown.
Serve warm, sprinkled with fresh herbs and a squeeze of lemon, if desired.
