Crispy Oven Baked Sweet Potato Fritters

  • 1 lbs Sweet Potatoes 
  • 2 Eggs, lightly beaten 
  • 1 tsp Cumin 
  • 1/2 tsp Chili Powder 
  • 1 tsp Sea Salt 
  • Flaky Sea Salt, for serving
  • 1/4 tsp Black Pepper 
  • 1 Onion, thinly sliced

Preheat oven to 400 degrees.

Peel sweet potatoes and grate using large holes of a box grater. In a large bowl, stir together sweet potatoes, cumin, chili powder, sea salt, pepper, onions and eggs.

On a lightly oiled sheet pan, scoop mixture by the heaping 1/4-cup-fill. Press into ½ -inch discs and space 2 inches apart.

Bake 20-25 minutes, until golden brown at edges, flipping halfway through baking. Sprinkle with flaky sea salt before serving.
