Preheat oven to 400 degrees.
Peel sweet potatoes and grate using large holes of a box grater. In a large bowl, stir together sweet potatoes, cumin, chili powder, sea salt, pepper, onions and eggs.
On a lightly oiled sheet pan, scoop mixture by the heaping 1/4-cup-fill. Press into 3 ½ -inch discs and space 2 inches apart.
Bake 20-25 minutes, until golden brown at edges, flipping halfway through baking. Sprinkle with flaky sea salt before serving.
