Cloumage Custard with Chai Spice Asian Pear Compote

Serves 2

Ingredients:

  • 4 oz. Cloumage Cheese (you can also use ricotta)
  • 5 Tbsp. Milk
  • 1 Asian Pear, cored and sliced thinly
  • 2 Tbsp. Honey
  • 2 Tbsp. Butter
  • ¼ cup Sugar
  • ¼ cup Water
  • 1 tsp. Cinnamon
  • 1 tsp. Cardamom
  • 1 tsp. Black pepper

Heat butter in a small sauce pan until it starts to foam. Add pears, sugar, cinnamon, cardamom and black pepper. Add water and allow to stew for 10-20 minutes, or until soft. If the liquid evaporates and your fruit starts to scorch, add 1 Tbsp. extra water at a time. Once the fruit is soft, remove from the heat and allow to cool completely.

In a medium bowl, whip together Cloumage, honey, and one tablespoon of milk. Slowly add more milk until the desired consistency is reached, about that of greek yogurt.

Add whipped Cloumage to ramekins, dessert cups or a small bowl, then top with compote. Serve at room temperature.
