Classic Hummus

60 Mins

Prep Time: 60 min + time for chickpeas to soak

Serves 4

Ingredients:

  • 1/2 cup Chickpeas, soaked for 5 hours
  • 1 stalk Green Garlic or 2 cloves Garlic, roughly chopped
  • 3 Tbsp. extra-virgin olive oil
  • 3 Tbsp. tahini
  • 1 1/2 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/2 tsp. black pepper, finely ground

Drain the soaked and rinsed chickpeas, then place them in a dutch oven or heavy pot. Add enough water to cover the chickpeas, then cover and bring the water to a boil over high heat. Reduce heat to low and allow the beans to simmer. Keep the chickpeas covered while simmering for about an hour. After an hour you may begin to check the chickpeas for tenderness. It can take 1-3 hours for them to reach desired softness. Once soft, rinse the chickpeas and allow them to cool to room temperature. Tip: For extra smooth hummus, pinch the skins off of the cooked chickpeas.

Combine rinsed chickpeas and all other ingredients in a food processor and blend until smooth. Taste and add ingredients until you reach desired flavor and consistency.

Serve in a bowl with a splash of olive oil on top. Adjust the flavor and texture to taste with additional salt, pepper, lemon juice, olive oil or tahini. For a more unique flavor, you can add any seasoning you’d like. Just remember that adding liquid ingredients such as sriracha, harissa, or Basbaas sauce will thin out the consistency.
