This is very easy to assemble and makes for a stunning centerpiece to any dinner party. Serve with a simple green salad and some nice cheese.
Take the sheet of puff pastry out of the freezer and let it defrost on the counter for about 30 minutes. Preheat your oven to 400 degrees. Cut cherry tomatoes in half and slice heirloom tomato. Line a baking sheet with parchment paper or tin foil. Unroll the puff pastry. Arrange the cherry tomatoes in the center of the puff pastry, cut side up. Leave about 1 inch of puff pastry as a crust. Season the tomatoes generously with salt, pepper and olive oil. Whisk the egg until frothy and brush on the exposed crust. Put in the oven and bake until the crust is deep golden-brown, about 15-20 minutes. Sprinkle with the herbs. Serve with the cheese alongside, cut into wedges, and a nice green salad.
Note: This is excellent with some caramelized onions strewn on top.
