Cut off both ends of orange so it sits flat on cutting board. Stand orange upright and, with knife, cut downward to remove peel and pith. Remove each segment individually by slicing on each side of membrane. Continue until each segment is removed. Set aside.
In blender or food processor, combine Cara Cara orange juice, honey, vinegar and Dijon. Blend 10 seconds to combine. With food processor on high, drizzle in olive oil.
Place baby lettuce mix and parsley in large salad bowl. Season lightly with sea salt and pepper.
Add vinaigrette and gently toss. Fold in feta, toasted almonds and Cara Cara orange segments. Serve immediately.
