Preheat oven to 400º.
Using a mandolin, slice radishes in ¼- to ⅛-inch rounds. Place in large mixing bowl and toss with oil, sea salt, and pepper.
Arrange radishes in single layer on baking sheet. Bake 10 to 15 minutes, turning once halfway through, until lightly browned and slightly crisp. Remove to wire rack to cool completely. Serve with your favorite dip.
