Bagels with Chive Cream Cheese and Ramps

Serves 2
Ingredients
  • 1 Package Smoked Salmon
  • 1 bunch Ramps
  • 2 Bagels
  • 1 bunch Chives
  • 1/2 container Cream Cheese (we love Kuyahoora Crème Cheese)
  • 1 Tomato, sliced
  • 1/2 an Onion, sliced

Cut the roots off your ramps. While holding a paper towel, grab the bottom white part of the ramp and gently strip away the dirty outer layer. Give the ramps a good wash and roughly chop.

Heat olive oil in a pan, add ramps and sauté for about 3 minutes. Season with salt and pepper to taste. Finely mince chives and combine with crème cheese in a small bowl. Toast bagels and layer on chive crème cheese, smoked salmon, sautéed ramps, tomato and onion slices.
