Dana Confection Co. was started in 2015 when Rachel Dana decided it was time to get Calissons on the shelves in Brooklyn so everyone could experience this delicious sweet from the south of France. She’s been perfecting her flavors for years, starting with the traditional combination of candied cantaloupe with almond flour, which creates a soft marzipan like texture that is topped with a crunchy royal icing.
We hand select only the freshest seasonal fruit from small farms and farmer’s markets to begin a slow candying process that takes 3-6 weeks. After preserving our fruit we make herbal and floral syrups, most of which we grow in our Brooklyn rooftop garden, to elevate the flavors, such as blueberry with thyme or pear with lemon verbena. These lovely little treasures have addictive powers that burst in your mouth with every bite.
